APPLE BEANS 
1 lb. snap beans, cut
3/4 c. water
2 tbsp. butter
3 med. Golden Delicious apples, sliced
2/3 c. sour cream
1 tbsp. sugar
1 tbsp. lemon juice
1 tsp. salt

Snap or cut beans 1/4 to 1/2 inch in length. In skillet, bring water and beans to a boil. Cover and boil gently until tender crisp and water has evaporated (about 8 minutes). Stir in butter and apples, do not cover; cook quickly, stirring until apples are hot and slightly cooked. (Just a few minutes.) Add sour cream, sugar, lemon juice and salt. Mix well. Reheat, but do not boil.
