BAKED SCALLOPS 
3/4-1 lb. scallops
1/4 c. chopped fresh parsley
4 Ritz crackers, crushed
2 tsp. butter
1 clove garlic, minced
Salt & pepper to taste

Scallops should be fairly uniform in size, if large, cut in half. Combine scallops, parsley and cracker crumbs. Set aside.

Melt butter in small skillet and saute garlic for 2 minutes until lightly browned. Add garlic butter to scallop mixture. Season with salt and pepper to taste. Turn mixture into small, shallow casserole. Bake at 350 degrees for 20-25 minutes or until scallops are opaque and crumbs are browned. Makes 3 or 5 servings. May be served with Walnut Pasta.
