1 1/2 c. sugar 3/4 c. firmly packed brown sugar 1/2 c. half and half 1/4 c. + 2 tbsp. butter 2 c. pecan halves Combine all ingredients in a large, heavy saucepan. Cook over low heat, stirring gently, until sugar dissolves. Cover and cook over medium heat for 2-3 minutes to wash down sugar crystals from sides of pan. Uncover and cook to the soft ball stage (235 degrees), stirring constantly. Remove pan from heat, and beat mixture with a wooden spoon just until mixture begins to thicken. Working rapidly, drop candy mixture by tablespoonfuls onto greased waxed paper; let stand until candy is firm. Makes 1 1/2 dozen. |
