CHUCK WAGON ROAST 
2 tsp. unseasoned meat tenderizer
2 tbsp. minced onion
2 tsp. thyme
1 tsp. marjoram
1 c. wine vinegar
4 lb. sirloin tip roast or steak
1/2 c. salad oil
3 tbsp. lemon juice
2 tbsp. cracked black pepper

Sprinkle both sides of meat with tenderizer. Prick meat so to absorb quicker. Let set 1/2 hour. Marinate roast or steaks in spice mixture 3 to 4 hours after the tenderizing. On a grill cook roast 8 inches over coals turning and basting as needed. Cook about an hour. Cook steaks to suit. Marinade has great taste!
