MARINATED ORIENTAL CHICKEN
KABOBS
 
2 chicken breasts, skinned and boned
Green onions or Bermuda onion
Cherry tomatoes
Green pepper, cut in chunks
1/2 c. soy sauce
1/4 c. sherry or any wine; optional
1 tbsp. sesame seeds

Use last 3 ingredients for marinade.

1. Cut boned chicken into 1 inch lengths.

2. Clean onions and green pepper, slice into 1 inch strips/ chunks.

3. Using bamboo skewers, alternate chicken, cherry tomatoes, green pepper, and onion.

4. Blend marinate ingredients and pour over skewered chicken. Let stand in marinade for 30 minutes or longer.

5. Arrange on round glass plate or shallow baking dish in circular fashion, 8- 10 long kabobs or as many short kabobs as will arrange allowing space between. Microwave on high for 3-4 minutes, turning once.

Since microwave ovens vary in power, you may need to adjust your cooking time.
