CHICKEN CUTLETS | |
4-5 boneless chicken breasts 1 pkg. fresh mushrooms, sliced 4-5 slices muenster cheese 1/2 c. chicken broth 2 eggs, beaten with 1/4 tsp. salt 1/2-1 stick butter Bread crumbs 1. Place chicken breasts between wax paper and pound with a mallet to flatten slightly. 2. Soak chicken in egg and salt for at least 1 hour. 3. Melt butter in a large frying pan, remove chicken from egg. Dip in bread crumbs and brown in butter on both sides, remove to baking dish. 4. Add mushrooms to frying pan, stir fry about 2 minutes. 5. Top chicken with mushrooms, then sliced cheese. Add chicken broth. Baked uncovered at 350 degrees for 30 minutes. |
