PORK IN CIDER 
1 1/2 lbs. lean pork cubes
1/3 c. flour
1/3 c. vegetable oil
1 1/2 c. apple cider
2 carrots, sliced
1 sm. onion, sliced
1/2 tsp. rosemary
1 bay leaf
1 tsp. salt
1/2 tsp. pepper

Dredge pork in flour. Heat oil in skillet. Fry cubes and drain oil from pan. Place cubes in casserole. Add cider to pan and deglaze pan. Add all else to casserole and pour cider over all. Cover and bake 2 hours. Remove bay leaf and serve with rice or brown rice. Serves 4.
