MURILLO'S RED BEANS AND RICE 
1/2 lb. Polish sausage (as fat free as possible)
1 sm. onion, chopped
1 lg. bell pepper, cored, seeded & diced
2 ribs celery, chopped
1 clove garlic, minced (optional)
1 (16 oz.) can kidney beans, undrained
1 (14 1/2 oz.) can tomatoes
1 c. cooked rice
1/4 c. red wine (optional)
1/2 tsp. crushed rosemary
1/2 tsp. thyme
Salt, pepper & Tabasco to taste

In a large saucepan or Dutch oven saute the sausage, onion, bell pepper, celery and garlic. To prevent sticking, spray the saucepan with cooking spray. Add the remaining of the ingredients and simmer for about 20 minutes. Serves 4.
