PHIL'S FAVORITE SHRIMP CREOLE 
1 med. onion minced (1/2 c.)
2 tbsp. butter
1/2 c. chopped green pepper, optional
1/4 c. chopped celery
1 can (6 oz.) tomato paste
1 bay leaf, crushed
1 tsp. snipped parsley
2 c. water
1 tsp. salt
2 c. clean, cooled shrimp
1/2 tsp. cayenne red pepper (or more)
3 c. rice or spaghetti noodles

Saute onions in butter until onion is tender. Stir in remaining ingredients except rice or spaghetti. Cook over low heat 30 minutes, stirring occasionally. Stir in shrimp. Heat through. Serve over rice or spaghetti. Phill preferred spaghetti.
