BEER BATTER | |
2 eggs, separated 2/3 c. beer 1 c. flour 3/4 tsp. salt 3 tbsp. melted butter Fish or vegetables Beat egg yolks until smooth. Add beer, beat together. Gently stir in flour and salt until blended. Mix in butter and allow to stand at room temperature for 30 minutes. Beat egg whites until stiff, fold into flour mixture. Dip fish or vegetable pieces into mixture, drop into hot oil. Fry until lightly brown, drain on paper towel. Enough for 2 pounds of fish. |
