PEAR HONEY 
8 c. ripe pears (peeled & chopped)
5 c. sugar
1 lemon, juice & rind

Put all ingredients into large, heavy pot. Bring slowly to a boil and simmer, until thick, about 45 minutes. Stir frequently to avoid burning. Pour boiling mixture into jars. Leave 1/2" headroom. Process in boiling water bath 20 minutes. Makes 1 quart.
