NEW ENGLAND CRANBERRY RAISIN PIE
3 c. rinsed cranberries (fresh or frozen)
2 1/4 c. diced apples
2 c. raisins
2 tbsp. vanilla
3/4 tsp. salt
1 (6 oz.) can apple juice concentrate
1/2 c. maple syrup
6 tbsp. cornstarch or arrowroot (approximately)
Poppy seeds for crust

Mix apples, berries and raisins in large bowl with vanilla and salt. Boil apple juice concentrate and then add to mixture in bowl. Sprinkle bottom of pie crust with 2 tablespoons cornstarch, then add mixture, little by little, adding in some cornstarch evenly throughout. You may want to add a few pats of butter on the top before putting on the top crust. Adding a couple tablespoons of poppy seeds to the crust is a nice touch. Bake at 400 degrees for 50 to 60 minutes or until done.
