SAUSAGE-VEGETABLE CASSEROLE 
2 1/2 c. water
2/3 c. milk
1 (5 1/2 oz.) pkg. dry scalloped potato mix
1 lb. fully cooked smoked sausage, cut into 1/2 inch slices
1 (16 oz.) pkg. frozen peas and carrots
1 sm. onion, finely chopped (1/4 c.)

In a 3-quart microwave-safe casserole, stir together water, milk and sauce packet from potato mix. Add potato slices, sausage, peas and carrots and onions. Cook covered on 100% power (HIGH) for 32-34 minutes or until mixture is heated through and slightly thickened, stirring every 5 minutes. Makes 4-6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
