POLISH SAUSAGE CASSEROLE 
1 lb. Polish sausage, in 2-inch slices
1 lg. onion, chopped
1 tbsp. vegetable oil
1 pkg. Betty Crocker Au Gratin Potatoes
2 1/2 c. hot water
1/4 tsp. pepper
4 med. carrots, in 2-inch strips
1 (10 oz.) pkg. frozen chopped broccoli, drained
1 c. Cheddar cheese

Cook sausage and onion in oil until tender, 5 minutes. Stir in potatoes, sauce mix, water and pepper. Heat to boiling stage, then reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in carrot strips; cover again and simmer until tender, 10 minutes. Stir in broccoli and cheese until heated and cheese melted. Use a 12-inch skillet. Great for pot luck!

EASY and DELICIOUS - a good BASE recipe. What is great about this recipe is that you can make it to your own liking. I cut the sausage into bite size pieces, used olive oil, added 1 med. cut potato (I ALWAYS add 1 potato - with skin on - every time I use a boxed mix),2 med. carrots and a 16 oz. frozen bag (rinsed and then cut into bite size pieces) of broccoli. WILL be making again -- but a little different!
