Easy and tasty healthy dinner. We found it needed more liquid, so we added a second can of tomatoes. Will make again.

This is a great, delicious and easy side dish. I didn't have fresh tomatoes so I used a 14 oz can of diced tomatoes with mild green chilies and used olive oil instead of the butter (my favorite - Devo chipolte olive oil. All this added a little spiciness to the dish. Try it.

This was a great recipe for my 1 year old! A few adjustments for a one year old dish: Use only canned tomato because fresh tomato skins will peel and curl, thus making them hard to digest for the little one. I basically made an eggplant, zucchini, onion, yellow squash, tomato dish with basil and oregano. This freezes very well, so I make a hugs amount and freeze it in ice cube trays. Then I pull out the cubes and defrost to send to daycare. Best of all, my HUSBAND ate eggplant and liked it!
