RITZ COOKIES 
1 lb. box Ritz crackers
1 med. size peanut butter
1 1/2 lbs. chocolate (dark or white)
3 tbsp. Crisco or paraffin (I use paraffin)

Spread peanut butter between 2 Ritz crackers. Melt chocolate and shortening (or paraffin) in top of double boiler. Carefully dip crackers into chocolate mixture completely covering them. Place crackers on waxed paper to coat.
