WHY DID THE CHICKEN | |
4 boneless chicken breasts Half a beer 1/3 c. milk 3 eggs Half cup peanut or sunflower oil 3/4 c. Italian bread crumbs 1/2 c. Parmesan cheese Salt & pepper to taste 1/2 c. whole wheat flour Pound breasts with knife edge or meat mallet to tenderize. Mix beer, milk and eggs together with fork. Marinate chicken in beer mixture an hour or overnight. Heat oil in skillet over medium heat until very hot. Mix crumbs, cheese, flour and salt and pepper in large plastic bag. Place chicken, one breast at a time in bag and shake to coat well. Fry in hot oil for 3 to 4 minutes each side until cooked through and fork tender. Not great for the body, but terrific for the soul. |
