RED VELVET CAKE 
1 1/2 c. cooking oil
1 1/2 c. sugar
2 1/2 c. plain flour
1 c. buttermilk
2 eggs
1 tsp. vanilla
1 tsp. vinegar
1 tsp. cocoa
1 tsp. baking soda
Sm. bottle red food coloring

Mix all ingredients together on medium speed until batter is smooth. Pour into 3 pans and bake 30-35 minutes on 325 degrees.

RED VELVET FROSTING:

1 (1 lb.) box powdered sugar
1 (8 oz.) cream cheese
1 stick butter
1 c. pecans, chopped
1 tsp. vanilla

Mix all ingredients together until smooth and spread on top and between layers of cake. Sprinkle chopped nuts on top.
