COUNTRY GARDEN DINNER 
2 c. potatoes
1 c. sliced carrots
1/2 c. chopped onion
1 c. tomatoes, canned
4 tbsp. butter
1 c. diced celery
1 lb. ground beef
1/2 c. chopped green pepper
1 tsp. salt

Butter a 1 1/2 quart casserole. Place potatoes in casserole, sprinkle with 1/4 teaspoon salt and dot with butter. Add diced celery and carrots, sprinkle with 1/4 teaspoon salt; dot with butter. In skillet melt 2 tablespoons butter, add ground beef, add 1/2 teaspoon salt and cook only until red disappears. Arrange beef over carrots, put onions and green peppers in skillet, simmer until onions are clear. Layer over meat. Pour tomatoes over all; dot with butter. Cover and bake at 400 degrees for 30 minutes, uncover and bake for 30 minutes.
