BLACKEYED PEA CORNBREAD 
1 c. cooked blackeyed peas
1 c. white corn meal
1/2 c. flour
1 tsp. salt
1/2 tsp. baking soda
2 eggs, beaten
1 c. buttermilk
1/2 c. corn oil
1 c. grated Cheddar cheese
1 med. chopped onion
2 chopped jalapenos, pickled
3/4 c. cream style corn
1 lb. ground beef, browned & drained
2 dashes seasoned salt

Mix all ingredients together, adding the cheese last. Spoon the blackeyed peas from the can pouring off some of the liquid.

Bake in greased oblong pan at 350 degrees for 45 minutes. Can be made in advance and warmed in the microwave. Cut into squares and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
