NATURAL CARROT CAKE 
2 eggs
1/2 c. warm honey
2/3 c. oil
1/4 c. buttermilk or milk
1 1/2 c. grated carrots
1/2 c. chopped nuts or raisins (optional)
1 1/4 c. whole wheat flour
1 tsp. salt
1 tsp. baking soda
2 tbsp. cinnamon

Preheat oven to 300 degrees. Grease 8 x 8 inch pan. Beat eggs, add honey, oil, milk. Beat until well blended. Stir in carrots and nuts. In separate bowl, sift together dry ingredients. Fold into carrot mixture. Do not beat. Pour into pan. Bake 30-40 minutes until toothpick comes out clean. Frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

12 oz. cream cheese
1/4 c. butter
2 tsp. vanilla
1/4 c. honey

When all ingredients are room temperature, mix well.
