CHICKEN-MUSHROOM TOSTADOS 
1 med. onion, cut in wedges
1 tsp. olive oil
2 c. shredded cooked chicken
1 tsp. ground cumin
1 red bell pepper or 1 green, cut into thin short strips
3/4 c. shredded Mozzarella
1 minced garlic
6 oz. sliced mushrooms
1 c. Pace Picante Sauce
6 flour tortillas (6-7 inch)

In large skillet, cook onion and garlic in oil until tender. Add mushrooms and cook approximately 4 more minutes. Add Picante sauce, chicken and cumin. Simmer uncovered for 10 minutes. While chicken mixture simmers, broil tortillas until brown and crisp. Top with chicken mixture and pepper strips. Sprinkle with cheese. Broil 1 more minute until cheese melts, and serve with extra Picante sauce, sour cream, etc.
