PINEAPPLE UPSIDE DOWN CAKE 
1 lg. can crushed or sliced pineapple, drained
2 tbsp. butter
1 c. brown sugar

CAKE:

2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 c. sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
1/2 c. milk

Sift flour, baking powder, and salt. Cream butter and sugar and stir in beaten egg yolks. Add flour and milk alternately, mixing well. Fold in lightly stiffened beaten egg whites and flavoring. Melt butter. Cover the bottom of the pan with brown sugar and add pineapple. Pour melted butter. Pour in cake batter and bake 45 minutes at 325 to 350 degrees.
