MANDARIN UPSIDE DOWN CAKE 
1 box yellow moist cake mix (with pudding in mix)

Follow directions except omit water and add 11 ounce can mandarin oranges (undrained). Pour into 3 (8") greased and floured pans. Bake at 350 degrees for 25 minutes. Cool 10 minutes in pan.

FROSTING:

1 (8 oz.) carton Cool Whip
1 flat can crushed pineapple, undrained
1 sm. instant vanilla pudding

Combine all but Cool Whip until mixture thickens. Fold in Cool Whip. Mix thoroughly. Keep cake in refrigerator until ready to serve.
