SMOTHERED OKRA 
4 qts. chopped okra (1 inch thick)
1 bell pepper
1 med. onion
3-5 fresh peeled tomatoes or 1/2 can Ro-Tel tomatoes and peppers

Add cayenne pepper when using fresh tomatoes. Salt to taste.

Chop bell pepper and onion fine. Add chopped okra and tomatoes and salt. Cook covered over a low, low fire. Stir to prevent sticking. Cook until slime is gone from okra, 1 to 1 1/2 hours.
