CHEESY EGGS IN A DISH 
8 slices white bread, crusts removed
8 oz. (2 c.) shredded Mozzarella cheese
8 oz. (2 c.) shredded cheddar cheese
8 slices bacon, crisply cooked, crumbled
6 eggs
3 c. milk
1/2 tsp. salt
Dash pepper

Heat oven to 350 degrees. Butter 13"x9" (3 quart) baking dish. Line bottom of dish with bread slices. Layer Mozzarella cheese, cheddar cheese and bacon. In large bowl, beat eggs. Add milk, salt and pepper; beat until well blended. Pour over cheese-bacon mixture in dish. Bake at 350 degrees for 45 to 50 minutes or until knife inserted near center comes out clean. 8 servings.

TIPS: Recipe can be made ahead to this point; cover and refrigerate overnight. To reheat, cover loosely with foil; heat at 350 degrees for 15 to 20 minutes.

I made this for Christmas brunch 2012. It was a huge hit and I even had to make another recipe the next day. I did a few things different, though, using ingredients on hand. I didn't use cheddar cheese, but substituted with 1/4 cup grated romano and 1/4 cup cream cheese. I used almond milk but not 3 cups, more like 2 1/3. This is so easy and I will be making it again.
