CANDIED WALNUTS 
1 c. sugar
1/2 c. water
1 tsp. cinnamon
1/2 tsp. salt
2 1/2 c. walnuts
1 1/2 tsp. vanilla

In saucepan combine: 1 cup sugar, 1/2 cup water, 1 teaspoon cinnamon and 1 teaspoon salt. Heat and stir until sugar dissolves. Cook to soft ball stage (236 degrees). Remove from heat and beat by hand until mixture begins to get creamy.

Add 1 1/2 teaspoons vanilla and 2 1/2 cups walnuts and mix well, then pour (scrape or whatever) mixture out on wax paper or buttered platter. Separate with spoons or forks into eatable size pieces.
