BROCCOLI-SQUASH MEDLEY 
1/2 c. fresh mushrooms, sliced
1 tbsp. butter
1 c. fresh broccoli, cut in 1" pieces
1 c. yellow squash, sliced
1 c. zucchini squash, sliced
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. water
1/4 tsp. grated lemon rind

Cook mushrooms in butter in medium skillet until lightly browned. Add remaining ingredients except lemon rind. Cover and gently simmer over low gas flame until vegetables are tender, about 10 minutes. Drain. Add lemon rind, stir gently. Makes 4 servings.
