RAISIN COCONUT CANDY 
1 med. potato
3 c. sifted sugar
1 c. seedless raisins
1 c. shredded coconut
1 tsp. orange extract or orange rind
Pinch of salt
3 sq. chocolate

bake or broil one medium sized potato until soft. Force through a coarse sieve or potato ricer. There should be 1/2 cup. Work all ingredients except chocolate together with fork. Shape in a cake 1/4 inch thick in a pan lined with waxed paper and leave until firm. Melt over hot water. Melt chocolate squares and put over mixture using pastry brush.
