EGGPLANT CASSEROLE 
1 med. sized eggplant
3 tbsp. butter
3 tbsp. flour
3 lg. tomatoes
1 sm. onion
1 sm. pepper
1 tsp. salt
1 tbsp. brown sugar
Bacon in sm. pieces
Bread crumbs
Grated cheese

Peel and dice eggplant and cook in salted water. Drain. Place eggplant in greased baking dish. Melt butter. Add flour and blend. Peel and slice tomatoes. Chop pepper and onion. Add vegetables to the butter with salt and brown sugar.

Cook 5 minutes and pour over eggplant. Cover with bread crumbs and bacon pieces. Top with grated cheese. Bake in 350 degree oven for 30 minutes.
