LEMON MERINGUE PIE 
1 1/2 c. sugar
1/2 c. flour
2 tsp. cornstarch
1/2 tsp. salt
2 1/2 c. boiling water
3 eggs, separated
6 tbsp. lemon juice
3 tbsp. lemon rind
Baked pie shell

Combine 1 cup sugar, flour, salt in double boiler. Add boiling water, stirring constantly. Cook until smooth and thick; cover and cook 15 minutes. Beat yolks with 1/2 cup sugar and pour hot mix over them. Return to double boiler and cook 5 minutes. Add juice and rind. Pour into shell. Cover with meringue made with whites.
