BANANA CAKE 
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup shortening or oil
1 cup of mashed ripe banana
2/3 cup of either buttermilk, sour milk or 1 tablespoon vinegar
2 eggs
1 teaspoon vanilla
Butter frosting

Grease and lightly flour two 9 x 1 1/2-inch round baking pans.

In a mixing bowl, combine the first 5 ingredients. Add shortening and banana; beat on low speed of electric mixer til combined. Add either buttermilk, sour milk or vinegar, eggs and vanilla. Beat 2 minutes on medium speed.

Turn batter into prepared pans. Bake in a 350°F oven for 30 minutes or until done.

Cool 10 minutes on wire racks. Remove from pans; cool thoroughly. Frost with butter frosting.

Makes 12 servings.
