PEAS (GREASE MAH SADDLE) 
Shell about 3 pounds of peas -- purple hull, blackeye, field, what have you. Put the peas in a pot with enough water to cover them 1". Add a piece of hog jowl (about 1/2 pound) gashed in several places, and one green hot pepper. Cover the pot and simmer the peas until they are tender. Don't add any salt, the hog jowl has plenty. Step aside, yankee folks.

loved the recipe and family did too... Born and raised all my life in South Carolina... but I have read many history books dating back before the 1830's and tons of people up north were eating this type of food like a staple... not sure who invented the recipe (north or south) but yours was great!
