PEAS (GREASE MAH SADDLE) | |
Shell about 3 pounds of peas -- purple hull, blackeye, field, what have you. Put the peas in a pot with enough water to cover them 1". Add a piece of hog jowl (about 1/2 pound) gashed in several places, and one green hot pepper. Cover the pot and simmer the peas until they are tender. Don't add any salt, the hog jowl has plenty. Step aside, yankee folks. |
