ZUCCHINI SQUASH RELISH 
8 c. zucchini, chopped
2 c. onion, chopped
5 tsp. salt
1 c. vinegar
4 c. sugar
1 tbsp. dry mustard
1 tbsp. cornstarch
1 tbsp. pepper
Scant tsp. turmeric
1 green pepper, chopped
1 red pepper, chopped

Combine zucchini and onion in a porcelain bowl or hard plastic bowl. Sprinkle with salt. Let stand 30 minutes. Boil vinegar, sugar, mustard, cornstarch, pepper and turmeric. Rinse zucchini and onion, drain. Add zucchini and onion and peppers to vinegar mixture. Cook 20 minutes, stirring often. Seal in hot jars.
