PERSIMMON COOKIES 
1/2 c. shortening
1 c. granulated sugar
1 egg
1 c. Persimmon pulp
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. salt
1/2 tsp. baking soda
2 c. flour
1 c. raisins
1 c. chopped nuts

Cream shortening then add sugar slowly. Add egg and beat well. Add persimmon pulp, spices, salt, soda and flour. Fold in raisins and nuts. Drop by teaspoon onto greased cookie sheet. Bake in 350 degree oven for 10 to 15 minutes. Yield: 3 dozen cookies.
