THE BEST BROCCOLI CASSEROLE 
2 pkgs. chopped frozen broccoli
1/2 - 2/3 c. mayonnaise
1 sm. pkg. grated cheddar cheese
4-6 slices bacon, fried & crumbled
1 egg, beaten
1 c. cream of mushroom soup
Ritz crackers (opt.)

Fry and crumble bacon. Reserve bacon grease. Cook broccoli as directed. Drain and set aside. Mix remaining ingredients together, except crackers and bacon. The more mayonnaise used, the creamier. Add in 2 to 3 tablespoons of bacon grease for added flavor, if desired. Fold in bacon and broccoli. Place in casserole dish. Sprinkle crumbled Ritz crackers on top, if desired. Bake at 400 degrees for about 45 minutes.
