WILD RICE SOUP 
1 c. uncooked wild rice
3 c. boiling water
3 strips smoked bacon
1 onion, chopped
2 stalks celery, chopped
2 carrots, chopped
1 (14 1/2 oz.) can chicken broth
2 cans cream of mushroom soup
2 soup cans of milk
1 can mushrooms (optional)
1 tsp. seasoned salt
Pepper to taste

Combine rice and boiling water in large saucepan, cook covered 50 to 60 minutes. Drain excess. Fry bacon until crisp. Saute onion, celery and carrots in small amount of bacon fat. Combine broth, soups, milk, mushrooms, salt, pepper, crumbled bacon, sauteed vegetables and wild rice. Simmer covered one hour.
