CAJUN BEANS AND RICE 
3 1/2 c. cooked undrained red beans or beans of choice or 2 (16 oz.) cans
2 c. water
1 c. sliced onion
1 c. diced celery
1 tsp. vinegar
1 lg. red or green sweet diced pepper
1 tsp. oregano leaves
1 tsp. thyme leaves
1 tsp. paprika
1/2 tsp. salt
1 lg. pinch cayenne pepper
1 c. chopped parsley
1/4 tsp. Tabasco sauce

Combine beans, water, onion, celery, sweet pepper, oregano, thyme, paprika, salt, cayenne pepper. Simmer on top of stove until mixture thickens, about 1 hour.

Stir in parsley, vinegar and hot pepper sauce. Makes 6 servings. (Hot pepper is optional). Serve with 6 cups hot brown rice.

1 serving with rice: 386 calories, 2 grams fat, 13.6 grams dietary fiber, 0 cholesterol.
