4 cups mashed sweet potatoes
1 1/2 cups sugar
2 tbsp. self-rising flour
1 tsp. vanilla
1/2 tsp. salt
1/2 cup (1 stick) butter
several large marshmallows, for top (optional)

Mix first 6 ingredients together well. Pour into a buttered pan and bake at 400°F for 30 minutes. When done, remove from oven.

If desired place several marshmallows on top. Put under broiler for a few seconds; marshmallows will begin to brown lightly.

Variation: Before baking, you may also add 1 teaspoon lemon juice, if desired.
