PUMPKIN OR SWEET POTATO BREAD 
3 c. sugar
1 c. oil
4 eggs
1 1/2 tsp. salt
1 tsp. cinnamon
2 c. pumpkin or sweet potatoes
3 1/2 c. all-purpose flour
3 tsp. baking soda
1 tsp. nutmeg
1 c. chopped nuts
3/4 c. water

Mix all ingredients in one bowl. Grease and flour 1 pound coffee can. Fill cans half full. Use 4 cans. Bake at 350 degrees for 1 hour. Test if done when bread pulls away from can.
