SWEET AND SOUR CHICKEN 
Cut up 1 lb. boneless chicken breasts into cubes

Dredge uncooked chicken cubes in:

1/2 tsp. salt
2 tbsp. cornstarch
3 tbsp. soy sauce
2 tbsp. sherry
1 tsp. sugar

Place chicken pieces in mixture while you prepare sweet and sour sauce. Let chicken set in sauce at least 1/2 hour.

SWEET AND SOUR SAUCE:

1 tbsp. oil
1 c. pineapple juice

Add oil to pineapple juice. Cook over low heat a few minutes. Add mixture of:

3 tbsp. cornstarch
1 tbsp. soy sauce
3 tbsp. vinegar
6 tbsp. water
1/2 c. sugar

Cook until juice thickens, stirring constantly. Stir fry chicken pieces in hot oil, drain. Add to sweet and sour sauce.
