RHUBARB CAKE 
MIX 1:

1/2 c. butter
1 c. sugar
2 eggs
3 c. flour
4 tsp. baking powder
1 c. milk
1 tsp. vanilla

MIX 2:

4 c. rhubarb, cut in 1/4 to 1/2 inch pieces
1/3 c. sugar
1 (3 oz.) box strawberry gelatin

MIX 3:

1/4 c. flour
1/2 c. sugar
3 tbsp. butter

Mix first 7 ingredients thoroughly and put in greased and floured 9 x 13 pan. Mix rhubarb with sugar and gelatin and pour over first batter. Make crumbly mixture of last 3 ingredients and sprinkle over all. Bake at 375 degrees for 35 minutes.

DIETITIAN'S NOTE:

This cake has the potential to be very low cal and will also supply you with some of your day's calcium needs. One cup rhubarb has 29 calories and 266 mg calcium (1 cup milk has an average 300mg calcium). Use butter flavored butter, 1/2 cup sugar, 6 packets Sweet One, 1/2 cup egg substitute and skim milk in mix (1). In mix (2), substitute 4 packets Sweet One for the sugar. Keep mix (3) the way it is but use butter flavored butter. Enjoy!
