ZUCCHINI CHOCOLATE CAKE | |
1/2 c. butter 1/2 c. cooking oil 1 3/4 c. sugar 2 eggs 1 tsp. vanilla 4 tbsp. cocoa 2 1/2 c. sifted flour 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 c. grated zucchini 1/2 c. buttermilk (or 1 tsp. lemon juice to 1/2 c. sweet milk) Cream butter and sugar together. Add eggs, vanilla and milk. Add dry ingredients. Stir in zucchini. Spoon into a 9x13 inch pan. Sprinkle top with chocolate chips and grated nuts. Bake at 325 degrees for 40 to 45 minutes or until done. |
