CARROT CAKE 
2 c. sugar
4 eggs, blended with 1 1/2 c. vegetable oil
2 c. grated carrots
1 c. crushed pineapple
1 c. chopped nuts
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tbsp. cinnamon

ICING:

4 oz. cream cheese
1/2 c. butter
Powdered sugar
1 tsp. vanilla

Combine sugar, eggs with oil, carrots, pineapple and nuts. Add flour, baking soda, baking powder, salt and cinnamon. Pour mixture into greased and floured 9x13 inch pan. Bake at 350 degrees for 45 minutes. Mix ingredients for icing and ice when cool.
