BEAN AND RICE CASSEROLE 
1/2 c. chopped onion
1/2 c. chopped bell pepper
1 lb. lean ground beef or sausage
2 (15 oz.) cans kidney or pinto beans
2 c. cooked rice
1 (16 oz.) can stewed tomatoes, drained and chopped
1 c. shredded sharp Cheddar cheese
1 tbsp. butter

May use blackeyed peas.

Saute onion and bell pepper in butter until tender. Add ground beef to onions and pepper, and brown beef. Stir in beans, rice, and tomatoes.

Spoon mixture into 2-quart casserole dish. Sprinkle cheese over the top. Bake at 350 degrees for 20 minutes. Serves 6-8 people as main course, or 10-12 as a side dish.
