CARROT CAKE | |
3 c. sifted flour 2 c. sugar 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 4 eggs 2 c. mashed carrots 1 1/4 c. cooking oil 1 c. chopped walnuts Combine first 5 ingredients. Add oil, carrots and eggs until smooth. Fold in walnuts and pour into ungreased tuber pan. Bake about 1 hour at 350 degrees. CREAM CHEESE FROSTING: 3 c. confectioners' sugar 4 oz. softened cream cheese 1 tbsp. vanilla Combine until blended. |
