ONE - HOUR ROLLS 
2 cakes compressed yeast or 2 env. dry yeast
1/4 c. warm water
1 1/2 c. buttermilk, heat to lukewarm
1/4 c. sugar
1/2 c. melted shortening or oil
1 tsp. salt
4 1/2 c. flour
1/2 tsp. baking soda
Butter

Dissolve yeast in warm water. Combine buttermilk, sugar, melted shortening and salt. Sift flour and soda into a large bowl. Mix yeast with buttermilk and add to flour mixture. Mix well. Allow to stand 10 minutes. Roll out 1/2 inch thick and cut in desired shapes. Melt some butter in a baking pan, place rolls in pan, turning each over to allow butter to coat tops. Allow rolls to stand 30 minutes and bake in a preheated 425 degree oven for 10 to 12 minutes. Makes 4 to 5 dozen, depending on size of rolls.
