MIDDLE EAST LENTILS AND RICE 
1 lg. onion, thinly sliced
1/2 c. corn oil
1 c. lentils
3 1/2 c. boiling water
1/2 tsp. salt
1/2 c. long-grain brown rice

Saute onion in oil until well browned. Add lentils, water, salt, and rice to onions. Cover and simmer without stirring until lentils and rice care tender, about 40 minutes. Serves 4.
