MEXICAN FIESTA CASSEROLE 
1 lb. ground beef
9 oz. pkg. tortilla chips
1 sm. diced onion
1 can cream of chicken soup
1 can Rotel tomatoes
1 c. grated cheddar cheese

Microwave ground beef on HIGH for 5 minutes. Mix cream of chicken soup and Rotel tomatoes together. Layer chips, cooked ground beef, onion, soup mixture and cheese. Cook until cheese melts and it is heated through. Also roast or turkey is good in this instead of ground beef.

Since microwave ovens vary in power, you may need to adjust your cooking time.
