MEXICAN FIESTA CASSEROLE 
1 lb. hamburger
1 c. shredded Cheddar cheese
1 c. sour cream
2/3 c. mayonnaise
1/4 c. chopped onion or 1 tbsp. dried onion
3/4 c. chopped green pepper
2 c. Bisquick
1/2 c. water
2 tomatoes, sliced

Brown meat with onion. Drain fat. Mix cheese, sour cream, and mayonnaise. Set aside. Stir Bisquick and water into soft dough. With floured fingers, pat dough in a greased 9 x 13 inch pan, pressing dough up sides of pan. Layer meat, green pepper, and tomato slices on dough. Spoon sour cream mixture on top and bake, uncovered, 25 to 30 minutes at 375 degrees. Cool 5 minutes, then cut.
